2 original and delicious Baby Corn recipes

 

This time we show you a pair of recipes made with Baby corn, a small vegetable full of fiber and flavour.

Firstly, we propose a salad of baby corn and toasted almonds. A vegetarian recipe to cook in less than 15 minutes.
Ingredients

  • 125g blanched almonds
  • 400g Baby corn
  • 80 ml peanut oil
  • 1 tablespoon fresh ginger
  • 1 tablespoon fresh ginger
  • 1 tablespoon wine vinager
  • 2 teaspoons wasabi paste
  • Salt

Preparation

  1. Fry almonds in a pan with medium heat, until toasted. Wait 10 minutes and coarsely chop
    Heat a barbecue grill or chargrill and put baby corn flavoured with oil and cook during 7 minutes or until tender.
  2. Mix the almonds and baby corn in a large bowl, combine with grated ginger, vinegar and wasabi paste. Mix well and season with salt.
  3. Then enjoy this delicious salad with an acid touch.

Now, we want to share with you another vegetarian recipe which you could use as appetizer at any moment. Baby Corn Cigars.

Ingredients

  • Pizza seasoning
  • Baby corns blanched
  • Toasted bread crumbs
  • Olive oil
  • Vinegar
  • Potatoes (boiled to make mashed potatoes)
  • Flour
  • Coriander leaves
  • Red chilli powder
  • Ginger chili paste

Ingredients for Sauce

  • Mayonnaise
  • 1 Pepper
  • 1 Onion
  • 1 Green Chili
  • Parsley Chopped
  • Sugar
  • Salt
  • Garlic powder
  • Olive oil

Preparation for Dipping Sauce

  1. Finely chopped pepper, onion and green chili.
  2. Mix with parsley and add mayonnaise, powdered sugar, a pinch of salt and a teaspoon of garlic in a bowl.
  3. Drizzle some olive oil and mix well. Keep the dipping sauce in the refrigerator.

Preparation Baby Corn Cigars

  1. Add red chili powder, a teaspoon garlic powder, salt and vinegar with some pizza seasoning. Drizzle some olive oil. Mix all ingredients well.
  2. Chop baby corns into halves. Add baby corns and coat the marinade over them.
  3. Cook baby corns in a hot pan for one minute. Remove them and keep them until they are cold.

For outer covering baby corn cigars:

  1. Mix in a bowl potato mashed, ginger chili, flour, coriander leaves and salt.
  2. Take a part of the mashed and roll baby corn cigars, removing the excess of the mash.
  3. Roll them into toasted bread crumbs and fry them.
  4. When they are done, you can put them into a small glasses with dipping sauce at the bottom. Like in the photo.
